Recipes
The Maple Touch
PURE maple
syrup can enhance the flavor or goods. Use it in some of your favorite recipes.
Pure maple syrup is slightly sweeter than cane sugar. It contains 62 calories
per tablespoon as opposed to 54 calories per tablespoon for sugar, but you use less maple
syrup. To use pure maple syrup in cooking, substitute 3/4 cup of syrup for each cup
of sugar and reduce the liquid in the recipe by 3 tablespoons.
Maple Cream
Cook syrup down to 24 degrees above the boiling point of water. Do not
stir. Put a little butter on sides of heavy kettle so syrup will not boil over.
Cool to room temperature. Stir until creamy and pour into containers. It
will set up stiffer as it sets. Maple cream is between butter and peanut butter
in consistency.

Maple Bran Muffins
3/4 cup Natural Wheat Bran
1-1/4 Cups whole wheatflour
1/2 cup milk
3 tsp. baking powder
1/2 cup maple syrup
1/2 tsp. salt
1 egg slightly beaten
1/3 cup chopped walnuts
1/4 cup oil
Glaze
1 tablespoon butter
1/2 cup confectioner's sugar
1 tablespoon maple syrup
Combine bran, milk and maple syrup. Mix in egg and oil. Combine remaining
muffin ingredients. Add bran mixture stirring until just moistened. Divide the batter into
12 greased muffin tins. Bake 400degrees for 18 to 20 minutes. Glaze: combine
ingredients, stirring to blend, and spread over warm muffins.
Sweet Maple Mustard - NEW RECIPE
1/4 cup prepared mustard
1 tsp. horseradish
2 Tablespoons maple syrup
Mix together and keep in refrigerator. Use on your favorite sandwich or wherever you normally use ordinary mustard.
Maple Salad Dressing - NEW RECIPE
1 cup salad oil
2/3 cup vinegar
1/2 cup sugar
1/2 cup maple syrup
1 1/2 tbsp. prepared mustard
Mix together and pour over tossed salad. Makes 2 cups plus, Store leftovers in refrigerator.
Oatmeal Maple Cookies
Yields: Makes two dozen delicious cookies
Mix ingredients together (mix well):
1/2 cup Crisco
1 1/2 cups flour
1 cup maple syrup
1/2 tsp. salt
1/2 cup milk
2 tsp. baking powder
1 egg, beaten
Add ingredients to above mixture and mix:
1 1/2 cups oatmeal
1/2 cup chopped nuts
1/2 cup raisins
Drop by tablespoon onto ungreased cookie sheet. bake at 375degrees for ten minutes. Cool on rack.
Microwave Maple Pudding
2 Cups Maple Syrup
1 egg
1 cup milk
3 tsp. heaping cornstarch
Mix syrup and egg together well. Dissolve cornstarch in milk. Mix
together well and put it in a microwave bowl. Cook ten minutes, press memory 1
select heat 8, stirring every three minutes.
Glazed Carrots
8 medium carrots
1/4 cup maple syrup
3 Tbs. butter
1/2 tsp. ginger
Slice carrots. Cook until tender. Melt butter. Add maple syrup and ginger to
melted butter. Simmer carrots in maple syrup mixture until glazed.
Maple Flavored Popcorn
Pop 1 cup of popcorn or 3 air popcom poppers full - After each shake unpopped kernels to bottom and sort out and put popcorn oven on
warm.
Combine:
3 cups of maple syrup
1 '/2 cups sugar
1 tsp. salt
1/2-314 stick margarine
Cook to 275 degrees or until it will spin a good thread 6 inches long.
Pour over popped corn stirring constantly and mix thoroughly. Can set back
in oven for short time to help crystal.
Maple Walnut Sauce
(Good on Ice Cream)
1 1/2 cups corn syrup
1/2 cup sugar
1 cup maple syrup
1/2 cup walnut pieces
Combine com syrup, Maple syrup, water and sugar in saucepan over
medium heat. Bring to boil, stirring occasionally. Reduce heat about 15
minutes. Stir in nuts. Pour hot into jars leaving 1/4" head space. Adjust cap.
Process 10 minutes in boiling water bath. Yield 4 eight-ounce jars.
Fruit Dip
Combine:
8 ounces cream cheese, softened
1 cup maple sugar
1 tsp. maple or vanilla extract
Fruit as desired
Combine cream cheese, maple sugar and extract in bowl, mix until smooth.
Chill in refrigerator. Spoon into serving bowl. Serve with apple slices,
pineapple slices, banana slices, peaches or pears.
Ham Glaze
2 or 3 tablespoons butter
3or 4 tablespoons maple syrup
3 tablespoons orange or pineapple juice
2 slices cooked ham
Melt butter in skillet. Add syrup and juice. Add ham and simmer, basting
occasionally, until meat is tender and glaze is syrupy. (about 15 minutes).
Creamy Maple & Ginger Parsnips
Yields: About 6-8 accompaniment servings
Prep and Cook Time: About 20 minutes
1 pound Parsnips - cut diagonally into 1-inch pieces
2 tablespoons extra virgin olive oil
4 Shallots, thinly sliced or 1/4 cup chopped onion
1 teaspoon salt
1/8 teaspoon ground Black Pepper
2 teaspoons sliced fresh Ginger root
2 tablespoons Maple Cream
1/2 cup Heavy Cream
Ground Ginger
PREPARATION:
1. Sauté parsnips, shallots and fresh ginger with olive oil
2. Add Maple Cream as shallots begin to caramelize
3. Cook until parsnips begin to soften
4. Add heavy cream
5. Transfer to baking dish
6. Sprinkle with powdered ginger
7. Bake for 20 minutes
Yams with Maple Crumb Sugar
Yields: 8-10 accompaniment servings
Prep and Cook Time: About 45 minutes
6 Sweet Potatoes or Yams
1 large apple, sliced (then ˝ the slices)
1/4 cup Butter
1/2 cup Maple Crumb Sugar
1/3 cup Flour
1/2 teaspoon Fresh Ground Nutmeg
PREPARATION:
1. Par-boil yams whole, let cool (easier to dice when parboiled)
2. Peel and dice cooled yams
3. Sauté until nicely browned
4. Layer yams and apples in baking dish
6. Make and add Maple Crumb Sugar topping:
7. Bake 20 minutes
To Make Crumb Topping:
Combine Maple Crumb sugar, flour, butter, and nutmeg in separate bowl. Mix with fork, and sprinkle over yams before baking.
